A cookbook entirely dedicated to Basque cooking is available in one convenient volume. Originally published in Spain as Alimentos y guisos en la cocina vasca, this book contains information on the history of Basque food from prehistoric times to the modern age, with discussion of the kinds of foods eaten, cooking utensils used, and methods of preparation. Vegetables, meats, fish, eggs, dairy products, desserts, and beverages are all included. An easy-to-understand recipe section covering a representative group of traditional Basque dishes includes specialties such as piperrada vasca (Basque omelet), porrusalda (vegetable stew), txangurro a la donostiarra (spider crab San Sebastián style), and natillas (soft custard). The book’s most in-depth chapter discusses the many different ways of preparing exceptional fish and seafood found in the Basque Country.

Author José María Busca Isusi was a world-famed authority on Basque cooking. He published several books on the subject and regularly contributed articles on gastronomy to newspapers in the Basque Country.
